Edition 2: Sea bream & anchovies recipe
We bring you another of the quick and easy yet tasty recipes from Nick, a Wessex Care resident who has kindly offer to share recipes from his popular book and Facebook page which has over 30,000 followers.
Nick has advanced MS. But when he wrote this book, he was able to stand assisted by crutches, and cook perching on a high stool. He proves it's possible to produce easy suppers like this despite the obstacle of a major disability. So, for an able-bodied person, it's simple, and Nick shows you how in his easy to follow recipes. Sea bream & anchovies
(Supper 1498)
Sea bream with salmon roe 'caviar', anchovies, fried preboiled potatoes, cherry plum tomatoes, fresh coriander. This supper is a great mixture of texture & flavours.
Preparation time: 2 mins
Cooking time: 10 mins
Serves: 1
Ingredients:
- 1 fillet sea bream
- 2 tbspns anchovies in olive oil
- 4 tspns salmon roe 'caviar'
- 3 fried pre-boiled new potatoes
- 3 cherry plum tomatoes
- 2 sprigs fresh coriander
- 1 slice lemon
Utensils:
- Frying pan
Preparation:
- Slice the potatoes.
- Season the sea bream & potatoes with salt and ground black pepper.
- Cut the tomatoes in half.
- Roughly chop the coriander.
Method
- Put a splash of olive oil in the frying pan.
- Put the frying pan on a hot hob.
- Put the sea bream & potatoes in the frying pan. Fry for 5 minutes.
- Turn it all over, to cook the other sides.
- 10 minutes from when you started, serve up everything on the plate, as in the photo, scattering the coriander over the tomatoes, and putting the salmon 'caviar' on the fish. The tomatoes & anchovies are served raw.
